one part lime juice
one part Triple Sec or Cointreau
two parts Tequila
one TBS sugar
Place all ingredients in blender with some ice. Whir.
Run lime rind over rim of glasses. Pour salt onto a plate. Press wet glass rim into salt.
Fill glass with ice and pour margarita onto it.
Key West Rum Punch
one part orange juice
one part cranberry juice
one part pineapple juice
rum to taste
Mulled Cider 201
4 qts. apple cider
1 cup (approx.) orange juice
one apple or four lady apples stuck with cloves
cinnamon
Heat to steaming and serve in mugs. Could be spiked with rum. Invented for my English 201 class on a cold December 9, 2002. Serves about 20.
Cider 356
An advanced mulled cider. Must have had 201 as a prerequisite.
Omit the orange juice and use Triple Sec instead. Served, only to those over 21, of course, to the students of English 356 and 303 on December 16-17, 2004.
Watermelon Martini 1 pound (about 2 ½ cups) watermelon cubes
4 oz. lemon vodka
Puree the watermelon in a blender til smooth. Strain the puree, reserving the juice and discarding the pulp.
In a metal cocktail shaker (yeah, right!) half filled with ice, combine the vodka and one cup watermelon juice. Shake well and strain into chilled martini glasses.
Asia de Cuba's Floridian 2 2/3 oz. orange vodka
1 oz. Cointreau or Triple Sec
4 splashes sour mix
2 splashes cranberry juice
2 twists orange peel
In a metal cocktail shaker half filled with ice, combine vodka, Cointreau, sour mix, and cranberry juice.
Shake well and strain into two martini glasses. Garnish with orange peels.
(Sour mix= 4 parts lemon juice to one part confectioner's sugar.)
Southside
4 oz. rum or vodka
3 oz. fresh lemon juice
4 tsp sugar
Club soda to taste
sprigs of fresh mint for garnish
Place rum, lemon juice, and sugar in shaker half filled with ice. Shake well and pour into a glass with ice. Top off with club soda. Garnish with mint.
