Creme Brulee

2 cups heavy cream

3 egg yolks

1 tsp vanilla

1/3 cup granulated sugar


Preheat oven to 300.

In bowl, whisk egg yolks and sugar until pale yellow and thickened.

Heat cream til bubbles form at edges and steam rises from center.

Add cream and vanilla to egg mixture.

Strain into indivudal ramekins (4-6).

Place them in a casserole and pour boiling water in to half way up the sides.


Cook for 40 minutes and check, maybe 10-20 more.

Remove and chill for two hours.

Before serving coat with sugar and caramelize with blow torch or under grill.
