OYSTER STEW
INGREDIENTS:
1/2 stick butter
3-4stalks of celery, minced
1 medium onion, chopped
2 cloves garlic, pelled and minced
1 pint half-and-half
1 (approx. 12 ounce) container fresh shucked
oysters, undrained
salt and ground black pepper to taste
1/2 pinch cayenne pepper, or to taste
DIRECTIONS:
Melt the butter in a large pot over medium heat, and cook the celery, onions, and garlic until onions are tender.
Add
half-and-half. Stir continuously. When the mixture is almost boiling,
pour the oysters and their liquid into the pot. Season with salt,
pepper, and cayenne pepper. Stir continuously until the oysters curl at
the ends.
Serves 2.
