Shrimp with Rum and Mint

 

For 8:

 

4 lbs. shrimp

6 TBS unsalted butter

1/2 cup finely chopped fresh mint or parsley

8 scallions, trimmed and finely chopped

1/2 cup dark rum

juice of 1 1/2 limes (6 TBS)

salt and freshly ground pepper to taste

 

 

1. Melt the butter in a large frying pan over medium heat. Add shrimp and cook for 1 minute

 

2. Stir in the mint, scallions, rum, lime juice, salt, and pepper. Bring to a boil and cook until shrimp are done, about one minute. Remove shrimp with slotted spoon.

 

3. Boil sauce over high heat until thick and syrupy, 2-3 minutes. Correct seasoning, adding salt, pepper, and lime juice to taste. Pour over shrimp and serve at once.
