2 lb. lean ground lamb or mixture of lamb and beef

2 onions minced

1 tsp cinnamon

1tsp cumin

1 tsp paprika

1 tsp coriander

2 TBSP chopped parsley (if available)

2 garlic cloves, crushed

olive oil for greasing


Place all ingredients in a box and mix together.

Divide mixture into portions and shape around a skewer into a long roll or sausage shape.

Brush with olive oil.

Cook on outdoor grill or under broiler about 10 minutes, turning often.
