Make rice with a can of coconut milk substituting for water. Use Lite coconut milk, if available, as regular coconut milk is very fatty.
To make even better, saute 2 tsp. fresh diced ginger in 2 TB butter. Cook one minute. Add rice. Saute another minute. Add coconut milk, salt, bring to a boil and cook as usual for rice.
This was my mother's favorite meal in 1995. She was sick of it by 1996.
