Fettucini with Mushrooms
1 package (9 oz.) fettucini
1 shallot, diced
1 small yellow onion, diced
4 tbs butter
4 tbs extra virgin olive oil
6 oz. shitake mushrooms, sliced
6 ozs. portobello mushrooms (or some other), sliced
6 ozs. crimini (brown) mushrooms, sliced
½ cup chopped fresh Italian parsley
½ cup freshly grated parmesan cheese
Melt butter in saute pan. Add olive oil. Turn down heat. Add shallot and onions and cook til getting golden. Add mushrooms. Turn down heat. Cook til they are brown and absorb the oil and give it up again. Add parsley. Add cooked fettucini and toss with the cheese. Very rich. Will feed 3 as a main course, 4 as a first course.
