Pasta with Sausage and Cream Sauce
½ lb. Sweet Italian sausage
1 ½ tablespoons chopped shallots or yellow onion
2/3 cup heavy cream
2 TB butter
2TB olive oil
1 lb. pasta, funny-shaped ones (fusilli, rotelle, shells, or conchiglie) best for this
salt and fresh ground pepper
Take the meat from the sausages by slitting them and scraping out meat. Crumble. Sauté in the butter in oil with shallots (shallots first, until golden, then sausage). Sauté for 10 minutes, stirring frequently. Add cream and pepper. Turn up heat to medium high, and cook til cream has thickened. Stir often. Taste and correct for salt.
Cook the pasta as usual. Add the sausage/cream and serve with grated parmesan.
