Tarragon Chicken

 

One package (6-8) chicken thighs

Olive oil, one cup (?)

Dijon mustard, 2 tsp. (?)

Salt and pepper

Fresh or dried tarragon in abundance


Mix olive oil, mustard, salt, pepper, and tarragon. Coat the chicken pieces in the mixture. Arrange in Pyrex dish. Bake in pre-heated 350 degree oven for an hour.

Serve with orzo.

Note to Teddy: Simple but yummy. There should be lots of tarragon, the way there's lots of oregano in chicken marbella. As a matter of fact, you can do the same recipe but substitute oregano for tarragon, and what you have is a simplified chicken marbella. Add raisins, capers, anything you have handy from the Chicken Marbella recipe.
