Jamaican Turkey Burgers

 

1.25-1.50 lbs. chopped turkey

3 slices fresh ginger, diced small

1 small onion, peeled and chopped

1.25 tsp. Madras curry powder

1 egg

a couple of slices nice bread crumbed in blender or 1 cup bread crumbs


Mix turkey, ginger, onion, curry powder, egg, salt and pepper in bowl. Form into patties. Spread out the bread crumbs on plate or waxed paper and lay patties on top, pressing, so crumbs adhere. Coat bottom of Teflon frying pan with a very little olive oil. (One of the good things about this recipe is that it's low-fat, so try not to add fat in the cooking.) Cook patties fourteen minutes or until thoroughly cooked. You don't want these rare. In a separate non-stick pan, in as small a quantity of olive oil as possible, saute a large sliced onion. Serve the patties on top of Texmati rice surmounted by the fried onions. Accompany with chutney.

 You can also form the meat into a loaf, omitting the bread crumb coating, and bake for 45 minutes at 350 degrees. Test for doneness.
