Annie's Curried Cauliflower

1 cauliflower
2 potatoes
1 onion
1 package frozen peas
1tsp cumin
1 TB ground coriander
2 cloves garlic
green chili in can OR lemon juice
olive oil

Fry a chopped onion in olive oil (garlic optional).
Add 1 tsp cumin and 1 TBS ground coriander. (Always use 3x more coriander than cumin.) Fry the spices.
Add chopped green chili from a can.
Add 1 lb. defrosted frozen petit pois and a few potatoes.
Pry cauliflower into bits. Cut out center with knife. Brown the cauliflower.
Stir fry all together for 5 minutes.
Add 1/2 cup water and 2 chopped tomatoes.
If you didn't use the green chili, mix lemon juice in before serving.

If you want it hot (spicy), add ground red pepper just before adding water.

Serves 6.
